TIRAMISU has to be one of the
most delicious desserts out there.
But complicated recipes call
for all kinds of mucking about - brewing coffee, whipping egg whites... it's
all a little messy and not exactly useful if you're rushing to provide a sweet
for a dinner party or cooking on a weekday night.
One night I figured I could
attempt something a little quicker, and to my surprise, it turned out tasting
delicious.
While the cream cheese layer
may not have the same super airy texture as ones using whipped egg whites, it
tasted delicious.
The recipe will easily serve
about eight people.
Super simple tiramisu
Ingredients:
- 1 250g pack of spreadable cream cheese
- 300ml thickened cream
- 1 packet of sponge finger biscuits
- Few spoons of caster sugar
- 600ml water
- Instant coffee
- Drinking chocolate
- Cocoa or drinking chocolate to dust
- Malibu rum (optional)
Method:
Take 600ml of water add
instant coffee, drinking chocolate and Malibu to taste.
Dip sponge fingers in to
liquid and arrange half of them on the bottom of the dish.
Whip the cream lightly, then
add in the cream cheese and sugar and finish whipping.
Tip: You can use an electric
mixer, but I found a hand whisk did the job just as easily as spreadable cream
cheese is easier to work with than the block variety. It's even easier if you
leave it out of the fridge till it reaches room temperature.
Spread half of the cream
cheese mixture over sponge finger biscuits in a large dish.
Repeat the layers and
sprinkle the top with cocoa or drinking chocolate.
This can be eaten straight
away, but is best after a couple of hours in the fridge.
