Ingredients:
- 1 tbsp butter, unsalted
- 1 onion, large, diced
- 1 clove garlic, peeled and smashed
- 2 tbsp tomato paste
- 1 ½ cup tomato puree
- ½ tsp mustard powder
- 4 chipotles in adobo, roughly chopped
- 2 tbsp red wine vinegar
- 1 tbsp worcestershire
- sea salt and pepper, to taste
- 1 dozen chicken wings, split (which makes 24 pieces)
- 2 tbsp oil
- 1 tsp sea salt
- 1 tsp black pepper, freshly ground
Directions:
- In a medium-sized saucepan, add the butter, onion and garlic. Sweat until the onions are translucent, stirring often (two minutes or so).
- Add all remaining ingredients (except the salt and pepper) and simmer for 20 minutes. Transfer to a blender and process until smooth. Season to taste.
- For the wings, preheat barbecue to 350 degrees F. In a large bowl, toss the wings in the oil, salt and pepper to coat. Grill on the barbecue for 15 minutes, turning once, until cooked through. Brush liberally on both sides with the chipotle barbecue sauce and grill another 5 minutes to caramelize slightly. Serve immediately with extra sauce, if desired.
