HEALTHY APPLE NACHOS WITH DATE CARAMEL

INGREDIENTS
  • 2 apples, unpeeled and sliced into wedges (Granny Smith and Royal Gala work well)
  • 1 ½ cup Greek yogurt, vanilla flavoured
  • mini chocolate chips
  • almond slivers, toasted
  • date “caramel”, for drizzling (recipe below)
  • unsweetened grated coconut, for garnish
DIRECTIONS
  • Core and slice each apple into the desired wedge size.  Note: if you will not be serving these immediately, squeeze some fresh lemon juice onto the wedges to prevent them from turning brown.  
  • Top each wedge first with yogurt and proceed to dress each with the chocolate chips, almond slivers, date caramel and coconut.  Serve immediately.

DATE CARAMEL
  • In a blender on the highest speed, puree 15 pitted all natural dates with ½ cup of water until smooth in consistency.  For best drizzling results, transfer to a squeeze bottle and reserve for use.  This is a great substitute for caramel garnish in many applications.
